Zucchini Cakes

- 3 c coarsely grated zucchini shopping list
- 1/2 tsp salt shopping list
- 1 c fresh breadcrumbs (from a crusty bread) shopping list
- 1/4 c diced red bell pepper shopping list
- 1-1/2 tsp Old Bay Seasoning shopping list
- 1 tsp Dijon mustard shopping list
- 1 egg shopping list
- 2 green onions shopping list
- 1 TB mayonnaise or plain yogurt shopping list
- 1/8 tsp red pepper flakes shopping list
- 2 TB vegetable oil shopping list
- 1 tsp butter shopping list
How to make it
- Place grated zucchini in a colander;sprinkle lightly with salt and let stand 30 mins. Press with paper towels to remove as much liquid as possible. Zucchini should be firly dry,and you should have about 2 cuos. Place zucchini and remaining ingredients(except oil and butter) in bowl. Mix well.
- Form 8 patties the size of crab cakes. Chill
- Heat oil and butter in skillet.
- Add patties to skillet and cook on both sides until browned.Drain on paper towels.
