Famous Lemon Cheesecake

- Crust: shopping list
- 1 1/2 cups graham cracker crumbs shopping list
- 1/3 cup butter shopping list
- 1/4 cup brown sugar shopping list
- Filling: shopping list
- 1 lb Philadelphia cream cheese at room temperature (2 packages 250 g.) shopping list
- or any good cream cheese brand. shopping list
- 3 medium eggs shopping list
- 1/2 cup sour cream shopping list
- 2/3 cup sugar shopping list
- 2 tbsp lemon juice ( use 2 fresh lemons and add a bit of zest ) shopping list
- Topping: shopping list
- 1 cup sour cream shopping list
- 4 tbsp sugar shopping list
- 2 tbsp lemon juice ( fresh with a bit of zest) shopping list
How to make it
- Crust:
- Preheat oven to 350 F. Mix together crust ingredients and press into the bottom of a 9-inch spring form pan or large glass pie dish. Bake in preheated oven for 5 minutes. Leave oven on.
- Filling:
- Mix filling ingredients together well to form a batter. Pour over crust. Bake in oven for 30 to 35 minutes, until firm to the touch. Leave oven on.
- Topping:
- Mix together and spread over cheesecake. Return to oven for 5 minutes. Let cool, I refrigerate it. If there is any left over, usually not a bite! Keep for days and freezes well.
- Serves 10
- I made a parfait with it last night see insert. I blended fresh strawberries, orange juice, pineapple and it was yummy!
