Champagne Mango, Avocado, & Tomato Salad

A fresh, flavorful, colorful salad. Champagne mangoes are smaller & just as tasty as the regular variety.

1 champagne mango, peeled and cubed shopping list
1 ripe avocado, peeled and cubed shopping list
1 vine tomato, diced shopping list
2 green onions, trimmed & chopped shopping list
several handfuls of baby romaine or other baby greens shopping list
2 tbsp olive oil shopping list
1 tbsp orange Muscat champagne vinegar (from Trader Joe's, or similar) shopping list
black pepper to taste, freshly ground shopping list

Mix oil, vinegar, and pepper well. Combine dressing with other ingredients & toss gently to coat.
