    Nice recipe, but Kumback Sauce (the way it is spelled in my home state of Mississippi) uses Heinz chili sauce -- the bottled stuff, not chili seasoning. Mr. Dennery, a Greek immigrant, invented the recipe in Jackson, Ms. and passed it along to his family which operated Dennery's Restaurant, There are several versions used by Greek restaurants in the state. ChefJeb posted the recipe most widely attributed to Mr. Dennery. Change this recipe to Heinz Chili Sauce and you have an acceptable version, although the cajun seasoning would mask the flavors.

    This sounds like the sauce I make (I'm originally from Mississippi) except I don't use mayonnaise and add in some brown sugar. More people need to know the flavors of the south!
