Smokey Mesquite Grilled Chops

- 4 extra thick pork chops (mine were boneless, center cut) shopping list
- EVOO shopping list
- Plastic wrap shopping list
- DRY RUB shopping list
- 4 T Weber Smokey Mesquite seasoning shopping list
- 1 t garlic pepper shopping list
- 1 t cumin shopping list
How to make it
- I love to rub seasoning onto pork chops, wrap them individually in plastic, and let that marinate for a few hours. They always turn out flavor packed and juicy!
- Mix dry rub together
- Drizzle a little evoo on one side of a chop and and a few pinches dry rub. Rub generously and repeat on the other side of the chop. Wrap in plastic and repeat with each pork chop.
- Place in fridge for 4 hours to over night.
- 30 minutes before grilling, set on counter to bring up to room temp to avoid sticking.
- Preheat grill and oil grate.
- Grill approx 8-12 minutes per side, til 160 internal temp
- Allow to rest 5 minutes before cutting / serving
