Ingredients
  • 1 lb. of potatoes, peeled and diced.
  • 2 tablespoons of butter
  • 1/4 cup of minced onion
  • tablespoons of tomato paste
  • 1 tablespoon of yellow mustard
  • 2 tiny gherkins (tiny sour pickles)
  • 2 tablespoons of heavy cream

Directions
  1. Cook the potatoes in salted water until just fork tender. Drain.
  2. Melt butter in skillet, add drained and dried potatoes. Toss.
  3. Add the onion and cook lightly until all is toasty brown.
  4. Add tomato paste, mustard and gherkins with the cream.
  5. Simmer five minutes and serve.

I want to try this


I like these a lot and the gherkins add a wonderful piquant flavor. Vaguely reminds me of when the sauerbraten gravy mixes into the potatos on your plate and yum, you have something more yummy.


Oh I gotta definately try these...we love potatoes at our house.....and trying something new is allways welcome.....now you got me thinking to post my party potatoes I make...they are very tasty too. thanks
