Norwegian Potatoes Circa 1944

- 1 lb. of potatoes, peeled and diced. shopping list
- 2 tablespoons of butter shopping list
- 1/4 cup of minced onion shopping list
- tablespoons of tomato paste shopping list
- 1 tablespoon of yellow mustard shopping list
- 2 tiny gherkins (tiny sour pickles) shopping list
- 2 tablespoons of heavy cream shopping list
How to make it
- Cook the potatoes in salted water until just fork tender. Drain.
- Melt butter in skillet, add drained and dried potatoes. Toss.
- Add the onion and cook lightly until all is toasty brown.
- Add tomato paste, mustard and gherkins with the cream.
- Simmer five minutes and serve.
