How to make it

  • Cook the potatoes in salted water until just fork tender. Drain.
  • Melt butter in skillet, add drained and dried potatoes. Toss.
  • Add the onion and cook lightly until all is toasty brown.
  • Add tomato paste, mustard and gherkins with the cream.
  • Simmer five minutes and serve.

    oh I gotta definately try these...we love potatoes at our house.....and trying something new is allways welcome.....now you got me thinking to post my party potatoes I make...they are very tasty too. thanks

    I like these a lot and the gherkins add a wonderful piquant flavor. Vaguely reminds me of when the sauerbraten gravy mixes into the potatos on your plate and yum, you have something more yummy.
