Cuban Fried Pork And Rice

For Pork
- 2lbs pork steak or loin shopping list
- 1/2 cup orange juice(not from concentrate) shopping list
- 1/2 cup lemonade(homemade or a pure lemonade like Simply lemonade, if possible:) shopping list
- juice from 1 lime shopping list
- 1T worcestershire sauce shopping list
- 1/4 cup dry minced or fresh grated onion shopping list
- 3 cloves garlic, minced shopping list
- 1/4 cup olive or peanut oil shopping list
- 2t ground cumin shopping list
- 1T dry oregano shopping list
- kosher or sea salt and fresh ground pepper shopping list
For Fried rice and Black Beans
- 3 cups cooked and cooled brown or wild rice shopping list
- 3T olive or peanut oil shopping list
- 1lb fresh pineapple(you don't have to buy and cut a fresh one, if you don't want, but you should be able to get yummy cut, fresh pineapple in the produce department...trust me, it's worth it! :) shopping list
- 1 can(or 2 cups, cooked) black beans, undrained shopping list
- 1 large, or 2 small bell peppers, diced shopping list
- 2 hot peppers, chopped shopping list
- 1 large onion, diced(I used half Vidalia and half red) shopping list
- 4 cloves garlic, minced shopping list
- juice from 1 lime shopping list
- 2T worcestershire sauce shopping list
- 2t oyster sauce shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
For Pork
- **prep and/or cook a day or so before, if desired.
- Combine all marinade ingredients in X-Large zipper bag.
- Add pork and toss to coat.
- Refrigerate at least over night, turning a couple times, if possible.
- Grill or broil pork over high heat just until it hits 160. Set aside to cool or refrigerate for up to 48 hours prior to using.
To Prepare
- In large stir fry pan or dutch oven(I used cast iron), cook onion in oil over low heat until just soft.
- Add peppers, garlic, and rice and stir to coat well.
- Continue to cook til rice just begins to change color...will get slightly transparent.
- Add rest of ingredients, including pork, cut into cubes, and continue to cook, stirring often, until heated through and well blended.
