How to make it

  • For Pork

  • **prep and/or cook a day or so before, if desired.
  • Combine all marinade ingredients in X-Large zipper bag.
  • Add pork and toss to coat.
  • Refrigerate at least over night, turning a couple times, if possible.
  • Grill or broil pork over high heat just until it hits 160. Set aside to cool or refrigerate for up to 48 hours prior to using.
  • To Prepare

  • In large stir fry pan or dutch oven(I used cast iron), cook onion in oil over low heat until just soft.
  • Add peppers, garlic, and rice and stir to coat well.
  • Continue to cook til rice just begins to change color...will get slightly transparent.
  • Add rest of ingredients, including pork, cut into cubes, and continue to cook, stirring often, until heated through and well blended.
