Zucchini Walnut Sour Cream Pancakes Recipe

Ingredients

1 1/3 c milk

1 c sour cream

2 eggs

3 Tbsp butter, melted

2 c pancake mix

1 c grated zucchini, squeezed dry

1/3 c chopped walnuts

Directions

Combine the milk, sour cream, eggs, and melted butter in a bowl. Mix completely.

Add pancake mix and stir to blend.

Add zucchini and nuts. Stir lightly; mix should be lumpy.

Cook on a hot griddle.

Serve with butter and syrup.

Zucchini and walnuts seem to have a natural affinity with each other. I make a side dish of sauteed zucchini with chopped toasted walnuts and crumble goat cheese on top. These sound wonderful. Amazing how much water the zucchini will give up, isn't it?

Sounds like a good combo but I am not sure I'd like it with syrup, maybe just some cinnamon butter and with a cheese omlet!
