Just like it says. Zucchini, walnut, sour cream pancakes. Where the recipe calls for "pancake mix" that can either be your average bisquick or the usual recipe you use (without liquids) for makin gpancakes from scratch.

Zucchini and walnuts seem to have a natural affinity with each other. I make a side dish of sauteed zucchini with chopped toasted walnuts and crumble goat cheese on top. These sound wonderful. Amazing how much water the zucchini will give up, isn't it?

Sounds like a good combo but I am not sure I'd like it with syrup, maybe just some cinnamon butter and with a cheese omlet!

My mom just made zucchini pancakes for her supper the other night. Too bad I didn't see this sooner or I would've told her to try this recipe! I'll get it to her for next time :)
