Zucchini Walnut Sour Cream Pancakes Recipe

How to make it

  • Combine the milk, sour cream, eggs, and melted butter in a bowl. Mix completely.
  • Add pancake mix and stir to blend.
  • Add zucchini and nuts. Stir lightly; mix should be lumpy.
  • Cook on a hot griddle.
  • Serve with butter and syrup.

    My mom just made zucchini pancakes for her supper the other night. Too bad I didn't see this sooner or I would've told her to try this recipe! I'll get it to her for next time :)

    Sounds like a good combo but I am not sure I'd like it with syrup, maybe just some cinnamon butter and with a cheese omlet!

    Zucchini and walnuts seem to have a natural affinity with each other. I make a side dish of sauteed zucchini with chopped toasted walnuts and crumble goat cheese on top. These sound wonderful. Amazing how much water the zucchini will give up, isn't it?
