How to make it

  • 1. Sprinkle chicken with salt and pepper. Spread flour on sheet of waxed paper. Toss chicken chunks in flour to coat completely. Preheat oven to 350'.
  • 2. Warm oil in large skillet over med-high. Add chicken and garlic. Lower heat to med and continue to cook until chicken begins to brown and garlic becomes fragrant,8-10 mins.
  • 3. Add chiclen broth,vinegar and brown sugar. Bring to boil. cover and simmer 10-15 mins,until chicken is cooked through and no longer pink in center. Add puree and cook 2-3 mins more till flavors are blended.
  • 4. Place rolls on large baking sheet. Top each of 6 bottom halves with a tomato slice(and fresh basil,if desired);divide chicken among them and sprinkle with mozzarella. Bake till cheese is melted and edges of rolls are crisp,5-7 mins. Serve immediately.
  • Tip:For broccoli puree,steam florets 6-7 mins. They should be tender but still bright green. Puree in processor or blender about 2 mins. If needed,add a few tsps. of water fro smooth,creamy texture. We had these on whole wheat ciabatta rolls.

    ROFL! Is the broccoli comment directed at me? LOLOLOLOL! This looks gorgeous Pat. Based on your word, I'll give it a whirl, as long as that's a promise that I won't taste the broccoli. LOL!
