Stuffed Pattypan Squash

- 1 cup Pattypan squash shopping list
- 2 pan friend slice bacon shopping list
- 2 tbsp fennel, Bulb shopping list
- 1/4 cup onions, Green shopping list
- 1/4 cup lemon Verbena shopping list
- 2 tbsp Fresh oregano shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper, White shopping list
- 1/2 tsp nutmeg, Ground shopping list
- 2 tbsp shredded coconut, Unsweetened shopping list
- 2 tbsp sliced almonds shopping list
- 1 tsp rice vinegar shopping list
- 1/4 cup Shredded Mozerrella cheese shopping list
How to make it
- Preheat oven to 350. I had one large pattypan and 1 small for this amount of flesh. Pierce the gourds, lightly rub them with olive oil, let them roast for 45 minutes. See Photo
- Remove from oven and let it cool well at least 15 minutes. Neatly slice off the top (you are preserving the large one for a bowl) and scoop out the seeds and discard See Photo. Continue scooping out the meat and set aside to dice. There will be quite a bit of water from the squash which you will want to pour off.
- Thoroughly chop up the herbs and toss with the squash. Add the coconut and almonds and let sit.
- Heat up a large skillet. Chop the bacon and dice the fennel. Put these into the skillet and fry up See Photo. When the bacon is well cooked, reduce the heat, add the squash mixture and toss well See Photo. You aren't completely cooking the squash just heating it up to meld the flavors.
- Remove the squash from the pan and put it back in its tossing bowl to cool. Sprinkle with the rice Vinegar.
- When it is all cooled off stuff the PattyPan gourd with the mixture. You can then put it in the refridgerator until you are ready to finish it for dinner.
- To complete, preheat oven to 375 and top with the mozzerella. Let it heat up for about 15 minutes or until the cheese is nice and bubbly brown. See Photo
