How to make it

  • Combine cream and sugar in medium saucepan and cook, over low heat, stirring occasionally, until it begins to simmer.
  • Stir slowly while simmering about 2-3 minutes. Do not let it get to a rolling boil, so don't take your eyes off it :)
  • Remove from heat, stir in citrus juice and let cool 20 minutes, stirring lightly every 5 minutes.
  • Pour into 6 1/2 cupish sized ramekins or similar single serve dessert dishes, OR, into about 3 dozen dessert shot glasses, depending on their size.
  • Refrigerate,without stirring, at least 4 hours.
  • When ready to serve, heat honey for about 20 seconds in the microwave and brush over cleaned, dried blueberries.
  • Top each posset with a few berries just before serving.
