Boursin Cheese Stuffed Chicken & Portabello Mushrooms

- I didn't measure the exact amounts here. shopping list
- 1 large boneless chicken breast cleaned shopping list
- boursin cheese with chives and garlic maybe 11/2 cups or make your own. There are many in GR. shopping list
- 3 large Portabello mushrooms ( If you don't like mushrooms just do the chicken and cut back on the cheese amount) shopping list
- A tad of butter or two shopping list
- salt and pepper to taste shopping list
- toothpicks shopping list
How to make it
- Preheat Oven or BBQ to 350F
- Slice open the chicken breast length wise and it will look like a butterfly. Place on solid surface with plastic wrap on bottom and top pound until thin with a meat mallet or rolling pin. Remove top plastic wrap and spread cheese over the chicken. Roll it up and hold it together with toothpicks.
- Place on foil wrap add a bit of butter on top and wrap foil around it. I used two sheets.
- Take mushrooms and with a spoon remove the inner dark membrane and discard. Fill will remaining cheese and place on foil. Wrap it up too.
- Put chicken in Oven or BBQ for approx. 45 minutes to an hour. Place mushrooms in Oven or BBQ for 30 minutes. Remove from oven and carefully remove toothpicks. Slice chicken garnish with more fresh chives optional. Easy clean up just throw away the foil. Serve with what your desire.* If you want it browned on top. Open up the foil 10 minutes before removing from oven or BBQ.
