Gorgonzola Potatoes Recipe
This side dish goes well with most meats. It's luxurious and tasty...and easy...what could be better?

Ingredients
  • 6 large baking potatoes
  • Veggie oil
  • 1 cup sour cream
  • 6 tablespoons butter, softened
  • 3 tablespoons milk
  • 4 oz. Gorgonzola, crumbled
  • 1 teaspoon salt

Directions
  1. Preheat oven for 450°
  2. Wash potatoes
  3. Rub skins with oil
  4. Bake in oven for 45 minutes
  5. Cut in half and spoon out potato pulp into a large bowl
  6. Blend in sour cream, butter, milk, cheese and salt
  7. Spoon back into the potato skins (should be mounded)
  8. Bake for 10 more minutes
  9. Serve hot
  10. (If you freeze ahead, reheat at 350° for 30 minutes)

as aiidjs mentioned, olive oil for veggie oil sounds like a good one! also it never hurts to add some bacon bits or green onions if you're into that sorta thing..
