Cinnamon French Toast Cookies

- 1 cup flour shopping list
- 1 ½ cups spelt flour shopping list
- 1 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 2 tsp cinnamon shopping list
- ¼ tsp nutmeg shopping list
- ½ cup shortening shopping list
- ½ cup low-fat cream cheese shopping list
- ¾ cup brown sugar shopping list
- ½ tsp stevia powder shopping list
- 4 tsp dehydrated egg powder + 5 tbsp water (alternatively, use 1 egg + 2 egg yolks) shopping list
- 1 ½ tbsp maple syrup shopping list
- 1 tsp vanilla shopping list
- 1 tsp maple extract shopping list
- 1/3 cup cinnamon chips shopping list
- 2 tbsp raw or coarse-grain sugar shopping list
- 2 tbsp cinnamon shopping list
How to make it
- Whisk flours, baking powder, salt, cinnamon and nutmeg in a bowl, set aside.
- Cream shortening, cream cheese, brown sugar and stevia.
- Beat in reconstituted egg.
- Add maple syrup and extracts, mix until combined.
- Stir in the flour until well mixed. Fold in cinnamon chips. See Photo
- On a lightly floured surface, roll dough into two logs. Wrap and refrigerate overnight.
- Heat oven to 350 F and line a cookie sheet with parchment or silicone.
- Mix raw sugar and the remaining cinnamon (best if you leave this overnight too!).
- Using a sharp knife, slice the logs into ¼" rounds and place on the sheets 1" apart.

- Bake for 10-12 minutes.
