Quick Summer Squash And Chiles

- 4T butter or olive oil shopping list
- About 2-3 cups sliced zucchini or yellow squash shopping list
- 2 medium Vadalia onions, sliced shopping list
- 3 cloves garlic, minced shopping list
- 3-4 mild green chiles, sliced or diced shopping list
- 2 medium tomatoes, diced shopping list
- 1 lime(or half a lemon) shopping list
- 1T fresh oregano, minced(or about 1t dried... I used Mexican) shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- In medium skillet, saute squash(es), onions, garlic, and chiles in butter or oil for about 5 minutes, until tender.
- Add tomatoes, juice from lime, oregano and salt and pepper and cook another 2 minutes, or so, stirring well.
- Serve immediately.
