The Islander With Sesame Mayo

- 3lbs ground pork shopping list
- 3 cloves garlic, minced shopping list
- 1/4 cup dry minced onion or grated fresh onion shopping list
- 1/4 cup worcestershire sauce shopping list
- 1/4 cup oyster sauce shopping list
- 1/2-1t liquid smoke(mesquite, if possible) shopping list
- 1T dry mustard shopping list
- 1T ground cumin shopping list
- 1T dried oregano(I use Mexican) shopping list
- juice from 2 small limes shopping list
- 2T honey(I used mesquite honey) shopping list
- several dashes sriracha or similar hot chili sauce shopping list
- kosher or sea salt and fresh ground pepper(plenty of it :) shopping list
- 1lb fresh pineapple, sliced in no more than 1/2 inch rings shopping list
- For Serving: buns, sliced white mild cheese like muenster, provolone, Havarti, etc, lettuce(I used spinach), tomato, onion and sesame mayo, below shopping list
For Sesame Mayo
- 1 cup mayonnaise shopping list
- 2T sour cream shopping list
- 1 heaping T toasted sesame seeds shopping list
- 1T fresh chives, snipped shopping list
How to make it
- Combine all burger ingredients well.(I use my hands!:)
- Form into 8 equal patties(they will be just over 1/3lb each)
- Grill over high heat for about 5 minutes each side. Safe temp for pork is now 145, but we still like about 150... VERY light pink, but no dark pink, but any longer, and they dry out :)
- Top each burger with cheese just before removing from grill.
- Grill pineapple slices about 1 minute each side.
- Build burger using pineapple, lettuce, tomato, onion and the sesame mayo from below.
Sesame Mayo
- Combine all ingredients and mix well.
- Refrigerate until ready to use.

Thanks so much for the post Keni. We live in Costa Rica and the beef here leaves much to be desired. These burgers have definitely made our top-notch burger list. Great with Chefjeb's hamburger bun recipe.
