How to make it

  • 1 Preheat oven to 180°C.
  • 2 Heat oil in a saucepan and fry garlic and peri-peri for a few seconds.
  • 3 Add tomatoes, sugar and vinegar and simmer until tomatoes soften and begin to break up then season and set aside.
  • 4 Cut 2-3 deep slits into the thickest part of each chicken piece. Place chicken skin-sideup in a baking dish.
  • 5 Pour over sauce and oven bake for 45 minutes or until cooked through and slightly charred.
  • Serve with salad and rolls to mop up sauce.
