Peri-peri Chicken Pieces

- 30 ml olive oil shopping list
- 4 cloves garlic, sliced shopping list
- 2 tsp ground peri-peri shopping list
- 4 medium tomatoes, peeled and chopped shopping list
- 2 tbsp brown sugar shopping list
- 2 tbsp red wine vinegar shopping list
- 1 pinch salt and milled pepper shopping list
- 8 chicken pieces shopping list
How to make it
- 1 Preheat oven to 180°C.
- 2 Heat oil in a saucepan and fry garlic and peri-peri for a few seconds.
- 3 Add tomatoes, sugar and vinegar and simmer until tomatoes soften and begin to break up then season and set aside.
- 4 Cut 2-3 deep slits into the thickest part of each chicken piece. Place chicken skin-sideup in a baking dish.
- 5 Pour over sauce and oven bake for 45 minutes or until cooked through and slightly charred.
- Serve with salad and rolls to mop up sauce.
