How to make it

  • Melt 4T butter in medium, heavy skillet(cast iron, if possible). Add onion and saute over medium low heat, stirring occasionally, until tender and just lightly browning, but don't let the butter burn.(this will give a sweet taste and really help sweeten the corn)
  • Add corn, milk,lime juice and sugar, if using. Increase temperature and simmer, stirring occasionally, until liquid is reduced by at least half.
  • Season with salt and pepper, and add remaining 2T of butter, if using.
