End Of The Season Corn Off The Cob

- 4 cups fresh or frozen corn, cut from the cob shopping list
- 1 medium sweet onion, diced small shopping list
- 4-6T butter shopping list
- 1/2 cup whole milk or half and half shopping list
- 1t granulated or raw sugar(optional, depending on your taste, and the sweetness of the corn) shopping list
- juice from 1/2 lime shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Melt 4T butter in medium, heavy skillet(cast iron, if possible). Add onion and saute over medium low heat, stirring occasionally, until tender and just lightly browning, but don't let the butter burn.(this will give a sweet taste and really help sweeten the corn)
- Add corn, milk,lime juice and sugar, if using. Increase temperature and simmer, stirring occasionally, until liquid is reduced by at least half.
- Season with salt and pepper, and add remaining 2T of butter, if using.
