Gringo Guacamole Tacos

- 2 ripe avocados shopping list
- 1 clove garlic - finely minced shopping list
- 1 lime or lemon juiced shopping list
- 2 small tomatoes - one diced and seeded , 2nd cubed shopping list
- tabasco shopping list
- salt shopping list
- pepper shopping list
- 1/2 cup grated cheddar or jack cheese shopping list
- 1/2 cup shredded lettuce shopping list
- 10 fresh corn tortillas shopping list
- vegetable oil shopping list
How to make it
- The guacamole is the first thing you want to make. Slice avocados in half, remove seed and peel. Cut into small cubes and place in a mixing bowl. Add garlic, juice from lime or lemon and mash with a fork. And electric hand mixer works well too. Add tabasco, salt and pepper to taste. Finally fold in the diced and seeded tomato. Set aside and fry tortillas.
- Place approx 1/2 cup of vegetable oil in a skillet and place on med heat. When the oil is hot place tortilla in and lightly fry flat tortilla for 15 sec, then using a pair or tongs fold the tortilla in 1/2 and leave a pocket between the two layers. I hold the top of the folded tortilla for a few seconds with the tongs after folding. Fry for a minute then flip the shell for another min. Remove and stand in a bowl with paper towels at the bottom to absorb grease. After a few mins, stuff tortillas with guacamole, lettuce, cheese and tomatoes. Serve with your favorite salsa.

These are fantastic! Making the tacos was easier than I thought! I added some cilantro and chopped jalapeno to the gaucamole and did some tacos with monterey jack and some with queso fresco. Delicious lunch...thanks!
