Blue Buttermilk Dressed Tomatoes And Cucumbers

- 1pt cherry tomatoes, halved, or grape tomatoes shopping list
- 1 large cucumber or 2 smaller ones, chopped shopping list
- 3/4 cup buttermilk shopping list
- 1/4 cup mayo shopping list
- 1T Dijon shopping list
- 1/2t dry mustard shopping list
- 1-2t dried dill weed or 1T fresh shopping list
- 2T fresh chives, chopped shopping list
- 1/2 cup blue cheese crumbles(I used gorgonzola) shopping list
- Kosher or sea salt and fresh ground pepper shopping list
- a squirt of fresh lemon juice OR a dash of red wine or balsamic vinegar shopping list
How to make it
- Combine all ingredients other than blue cheese, tomatoes and cucumbers and lemon juice in medium bowl.
- Whisk well.
- Add half the blue cheese crumbles and stir to combine.
- In large bowl, with lid, add cucumbers and tomatoes and pour dressing over them(reserve some of the dressing, if desired... you might not want it all on their, or you might want to serve it on the side..some like more than others :)
- Toss well and refrigerate. Add remaining blue cheese and lemon juice and toss once more, just before serving.
- OR, if serving immediately, just go ahead and add it all to the dressing, toss, and serve! :)
