Italian Salad Sandwich

- 1lb loaf rustic Italian bread, sliced into 1/2 inch slices shopping list
- 1/2 stick butter, melted shopping list
- 4 cloves garlic, halved(roasted, if desired) shopping list
- 8oz fresh mozzarella, sliced shopping list
- about 6oz fresh baby spinach leaves shopping list
- 2 fresh tomatoes, sliced thin shopping list
- 1 red onion, sliced thin shopping list
- 8oz prosciutto, sliced thin shopping list
- fine sea or kosher salt and fresh ground pepper shopping list
- Italian dressing or vinegar and oil, optional shopping list
How to make it
- Brush melted butter over one cut side of each slice of bread(12-18 pieces, depending on the size).
- Rub cut side of garlic over the buttered bits of bread.
- Sprinkle with salt and pepper.
- Bake at 400 for about 5 minutes, just until edges are beginning to turn golden.
- Add slices of cheese, spinach leaves, tomato and onion slices and prosciutto and return to oven.
- Bake another 5 minutes or so until cheese is melted and toast edges are crunchy.
- Drizzle with dressing just before serving, if desired.
