Georgia Peach Oatmeal

- 1 cup steel cut oats shopping list
- 2T butter shopping list
- 1 cup half and half or milk shopping list
- 1 1/2 cups peach or peach blend 100% juice(I used a peach/raspberry) shopping list
- 1 1/2 cups water shopping list
- 1-3T honey or raw or brown sugar(to taste) shopping list
- 1t vanilla shopping list
- 1/4t fresh grated nutmeg shopping list
- 2 medium fresh peaches, pitted and diced(I don't peel) shopping list
- 1/4 cup lightly toasted pecans(or can sub another nut like maybe, almonds :) shopping list
- dash of salt shopping list
How to make it
- Melt butter in medium, heavy saucepan. Careful not to burn.
- When just melted, add oats and stir to coat them with the butter.
- Let cook about 1-2 minutes, stirring often.
- Add juices and water and stir.
- Increase temp to bring to a boil, then immediately reduce heat and simmer, uncovered and unstirred, about 20-25 minutes.
- Stir well and add peaches, honey, vanilla, nutmeg, pecans, salt and half of the half and half.
- Continue to cook on low, stirring often, for about 7 minutes. Add half and half or milk as needed to reach desired consistency.
- You can add pinch bowls of sugar or lil pitchers or warmed cream and honey to the table, if desired, so everyone can add, as desired.
