For Beef Brisket
- 5-6lb beef brisket(trimmed before or after, your call. I do after :) shopping list
- 3T sweet or hot paprika shopping list
- 1t chili powder(I used ancho) shopping list
- 1T granulated garlic shopping list
- 1T dried minced onion shopping list
- 1t dried oregano shopping list
- 1-3t cayenne shopping list
- 1T kosher or sea salt shopping list
- 2t or more of fresh ground pepper shopping list
For Texas Toast
- 2 1lb loafs Italian bread, sliced into 1 inch slices shopping list
- 1 stick butter shopping list
- garlic or garlic powder, to taste, and your preference shopping list
For Easy Spicy/Creamy Coleslaw
- 8 cups shredded cabbage(or cole slaw mix) shopping list
- 1/2 red onion, grated shopping list
- 1/4 cup avocado Ranch or Green Goddess dressing shopping list
- 1T Southwest style mustard shopping list
- juice from 1/2 lime shopping list
For chili seasoned Fries
- 1 package french fries, prepared and tossed with a lil chili powder, garlic and salt shopping list
- (feel free to make your own, if you want....they aren't the star, so I just used frozen :) shopping list
For Serving
- Mayo and sliced pepper jack cheese shopping list
How to make it
For Brisket
- Combine all dry ingredients well and rub entire surface of meat with it.
- Following grill or smoker directions, smoke beef at a low temp so that it cooks 6 hours at the VERY minimum.... 12 is much, much better. (I was able to time mine right at the 11 hour mark) and reaches 180 degrees at the thickest part.
- Remove from heat.
- Cover meat with foil and let rest at least an hour. If you want to use it right away, just slice it very thin, against the grain, and continue with the recipe.
- OR, you can let it rest for an hour, then keep it covered and put it in the fridge then, the day of using, let it rest outside of the fridge for an hour or so to take the chill off, then slice against the grain and continue.
For Cole Slaw
- Combine all dressing ingredients well, then toss with the shredded cabbage and onion. Best to let rest a couple hours in the fridge before serving.
For Texas Toast
- Melt butter and mix with minced garlic or garlic powder.
- Brush ONE side of each slice of bread with the mixture.
- Bake at 400 for about 7-9 minutes, until lightly golden brown.
To Serve Primanti Brothers Style
- Stack the cheese, beef, fries and cole slaw on one slice of the garlic bread and apply mayo to the other.
