How to make it

  • In large saucepan or dutch oven, heat berries with cider, ginger and whole cinnamon sticks.
  • Heat on medium heat at a low simmer, stirring occasionally, for about 20-25 minutes.
  • Mixture should reduce by no more than 1/2.
  • Remove cinnamon sticks and any larger pieces of the ginger if they aren't soft.
  • Add vanilla.
  • Using a stick blender, blend mixture well making sure no large bits are still present.
  • If serving cold or room temp, strain mixture into serving pitcher.... I used a mesh strainer :), add sparkling water and give it a stir. Serve.
  • If serving hot, add sparkling water, give it a stir, heat briefly THEN carefully strain into a pitcher to serve. ;)

    This cider was a hit with my family. Kids has 2nds and 3rds, I had 2nds, wife had 2nds... much better than cider alone. kids reaction "this is soooo good!". We had it warm, and were able to save some in the fridge, so we'll try it cold tomorrow and let ya know how that turns out. will make again.

    I immediately pictured a batch of Berry Cider simmering in a crockpot on a sideboard for a Thanksgiving family gathering.
