I can't remember who made it first or where the recipe came from but I remember the arguments over we should use green or red cherries or both. What a silly argument.... Ingredients

1/2 lb. candied pineapple

1/2 lb. pitted chopped dates

1/2 lb. candied cherries (color your choice)

3 cups of chopped fresh pecans

2 cans of coconut 7 ounces each

1 can of condensed milk

Directions

Note: These days I buy the fruit at the health food store and try to avoid the funny colored cherries.

Dump all ingredients in a big bowl,

Stir well to mix.

Pack and I mean pack it down firmly in a greased loaf pan and bake for one hour at 250 degrees, a low oven.

Slice and keep in a tightly covered tin.

PS is it coconut cream that you use? Not sure what's meant by a can of coconut, sorry.

Baker's flaked coconut, not coconut cream. The coconut comes in a seven ounce can, so I use two.
