How to make it

  • Note: These days I buy the fruit at the health food store and try to avoid the funny colored cherries.
  • Dump all ingredients in a big bowl,
  • Stir well to mix.
  • Pack and I mean pack it down firmly in a greased loaf pan and bake for one hour at 250 degrees, a low oven.
  • Slice and keep in a tightly covered tin.

    Thanks Tina.....WOW! This is one I will be trying. I love the idea of Fruit Cake, but never liked the taste of it. This will surely not be around long enough to become a door stop LOL.. Thanks for the interesting recipe.

    Baker's flaked coconut, not coconut cream. The coconut comes in a seven ounce can, so I use two.
