Ingredients
  • 1/2 lb. candied pineapple
  • 1/2 lb. pitted chopped dates
  • 1/2 lb. candied cherries (color your choice)
  • 3 cups of chopped fresh pecans
  • 2 cans of coconut 7 ounces each
  • 1 can of condensed milk

Directions
  1. Note: These days I buy the fruit at the health food store and try to avoid the funny colored cherries.
  2. Dump all ingredients in a big bowl,
  3. Stir well to mix.
  4. Pack and I mean pack it down firmly in a greased loaf pan and bake for one hour at 250 degrees, a low oven.
  5. Slice and keep in a tightly covered tin.

PS is it coconut cream that you use? Not sure what's meant by a can of coconut, sorry.


Baker's flaked coconut, not coconut cream. The coconut comes in a seven ounce can, so I use two.
I'm sorry I wasn't clear.
