Asian Cucumber Salad Recipe
A slight variation of the cucumber salad my Japanese grandma used to make. The longer they marinate, the more the cucumbers soak up the flavors, yet stay super crunchy!

Ingredients
  • 2 average sized English cucumbers
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 3 tbsp soy sauce
  • 3 tbsp white vinegar
  • 2 1/2 to 3 tbsp sugar

Directions
  1. Halve the cucumbers length wise
  2. Slice very thinly
  3. Place cucumbers in medium bowl, add salt
  4. Let sit 10 minutes. Drain.
  5. Add remaining ingredients
  6. Stir until sugar is dissolved
  7. Serve immediately or chill to serve later!

I ABSOLUTELY loved this recipe! I have never had cucumbers dissapear so fast. My cucumbers went limp after a few hours even being refridgerated. Would they stay crisp if you didn't do the salt bath? What exactly is the salt bath for?


My g-ma has a similar recipe but it also includes yellow onions and sour cream, yum!
