Ingredients
  • Fresh caught drum, redfish or other thick white fillets in large pieces
  • Ball-park style yellow mustard
  • Flour
  • Peanut or vegetable oil
  • HIGH HEAT SOURCE

Directions
  1. Heat oil in a deep cast iron skillet, high heat. Don't over fill the skillet
  2. If nervous, use a deep pot instead.
  3. Coat the fish fillets generously with the mustard all sides.
  4. Roll in flour.
  5. Deep fry until golden brown and crispy.
  6. Drain on brown paper sacks.
  7. Serve with tartar sauce, hush puppies, and coleslaw.
  8. Watermelon for dessert, thank you very much.

I have coated fish in mustard, then cornmeal, even though my regular method is cornmeal, salt and pepper. But the mustard gives it a good spark of flavor, and it is very good. Thanks for the reminder. It is a great way to fry fish!!
