Covert Apple Cranberry Crisp

Filling
- 4 medium Northern Spy apples (Granny Smith work too), peeled, cored and cut into 1/2 inch wedges shopping list
- 2 tbsp sugar shopping list
- 1 tbsp lemon juice shopping list
- 1/2 cup dried cranberries shopping list
- 1/4 cup apple cider shopping list
- 2 tbsp melted butter shopping list
Topping
- 1/2 cup AP flour shopping list
- 2/3 tsp cinnamon (more or less to your taste) shopping list
- 6 tbsp butter, cut into small pieces shopping list
- 1/2 cup rolled oats shopping list
- 2 tbsp brown sugar shopping list
- 1/4 tsp salt shopping list
How to make it
- Preheat oven to 350F.
Filling
- Put apples in a large bowl. Add sugar and lemon juice, toss well. Add cranberries, cider, and butter. Toss well. Spread filling into an 8x8 baking dish.
Topping
- Place flour into a mixing bowl. Add cinnamon and incorporate. Add butter and cut with pastry cutter or your fingers until it starts to resemble a coarse meal. If needed, add a bit more flour at this point. Add oats, sugar and salt and mix to incorporate. Sprinkle topping evenly over the apples. bake in upper third of the oven for 55 minutes. Let cool slightly and serve with a scoop of vanilla ice cream if you have it.
