How to make it

  • Preheat oven to 350F.
  • Filling

  • Put apples in a large bowl. Add sugar and lemon juice, toss well. Add cranberries, cider, and butter. Toss well. Spread filling into an 8x8 baking dish.
  • Topping

  • Place flour into a mixing bowl. Add cinnamon and incorporate. Add butter and cut with pastry cutter or your fingers until it starts to resemble a coarse meal. If needed, add a bit more flour at this point. Add oats, sugar and salt and mix to incorporate. Sprinkle topping evenly over the apples. bake in upper third of the oven for 55 minutes. Let cool slightly and serve with a scoop of vanilla ice cream if you have it.

    This sounds fabulous! I have never heard of Northern Spy apples! Maybe they don't ship yankee apples down here? lol : ) I am saving this to try, and gonna look for those apples.

    I know you can't get them everywhere. Mostly in Northern Climates and are better after a frost and will keep very well if kept cool. They call them Northern Spies. Great for eating or cooking.
    My Grandfather had a Northern Spy Orchid.:-) Granny Smith will do just fine.:-) GK

    I had to check out this recipe to see what the "Covert" thing was all about. ;) Love the combination of tart apples and cranberry. I'm not familiar with that type of apple, though. My favorite for baking is Granny Smith. Do you like the Spies better?
