Smoky Paprika Chicken

- 4 Tblsps olive oil shopping list
- 1 Tblsp butter shopping list
- 3 large carrots, peeled and cut into chunks shopping list
- 5 baby yukon gold potatoes, quartered shopping list
- 1 large onion, sliced shopping list
- 3 or 4 boneless/skinless chicken breasts shopping list
- 1 heaping teaspoon smoked paprika shopping list
- 1/2 teaspoon garlic powder shopping list
- salt and pepper to taste shopping list
How to make it
- Saute the carrots, potatoes, and onion in 2 Tblsps olive oil until caramelized and just starting to get tender. Remove from skillet and keep warm.
- Combine seasonings and rub on both sides of chicken.
- Add additional olive oil and butter to the skillet, and sear the chicken. (But not cooked all the way through) Remove from the skillet to a plate.
- Return the veggies to the skillet, place the chicken on top. Lower heat, cover and continue cooking for about 30 minutes until the chicken is fully cooked and the veggies are tender.
- (Keep an eye on the chicken during the 30 minute cooking time and add some water if necessary. Placing the chicken on top of the veggies means that the chicken juices add more flavor to the vegetables)
