For Slow Cooked Cincinnati Style turkey Chili
- 1lb ground turkey(the Devonshire traditionally uses turkey, so I decided to use it in this chili....and it was excellent :) shopping list
- 2 cloves garlic, minced shopping list
- 1/4 cup dried minced or grated fresh onion shopping list
- 2T chili powder shopping list
- 1t ground cinnamon shopping list
- 1t ground cumin shopping list
- 1t cayenne pepper shopping list
- 1T unsweetened cocoa shopping list
- 1 bottle Heinz Chili Sauce(12oz) shopping list
- 1 can tomato paste(6oz) shopping list
- 2T worcestershire sauce shopping list
- 2T red wine vinegar shopping list
- kosher or sea salt and fresh ground pepper shopping list
For Cheese Sauce
- 1/2 stick butter shopping list
- 3/4 cup flour shopping list
- 1/2lb cheddar or colby cheese, grated shopping list
- 2 cups half and half shopping list
- 2 cups chicken stock shopping list
- kosher or sea salt and fresh ground pepper shopping list
For Sandwich completion
- 9-10 pieces thick cut hardwood smoked bacon, cut in half and cooked crisp shopping list
- about 1/3 cup fresh grated Parmesan mixed with a touch of paprika or cayenne(I used cayenne :) shopping list
- 6 large slices bread, crusts removed(optional)--I used a nice rounded loaf of Tuscan bread and it worked great shopping list
- fresh tomatoes, sliced(optional) shopping list
How to make it
For Chili
- Using two knives or your food processor, finely grind, or mince, the ground turkey
- Combine all ingredients in a slow cooker and cook for at least 4 hours, up to 8, on low setting.
- **do this a couple days ahead, if you want, to save time
For Cheese Sauce
- Melt butter in medium sauce pan over medium heat.
- Add flour and stir quickly, until bubbly and smooth.
- Add stock, then half and half.
- Increase temp and whisk lightly while bringing to a boil.
- Immediately reduce heat to medium low, add grated cheese, salt and plenty of fresh ground pepper and heat stirring or whisking often, for about 10-15 minutes.
- Remove from heat and let stand another 10 minutes, or refrigerate for up to a few hours.
To Assemble the Sandwiches
- Place a slice of bread in the bottom of a heat proof single serve dish(gratin dishes worked great :), or, alternately, lay down 6 pieces of bread in a casserole dish, making sure not to crowd them.
- Lay 3-4 half slices of bacon over each piece of bread. See Photo
- Top with tomato slices, if using. See Photo
- Spoon over a couple scoops of chili(warmed or room temp, but don't use cold) See Photo
- Ladle cheese sauce over the top of the chili(as above room temp or warm, but not cold)
- Sprinkle with the Parmesan/cayenne or paprika mixture
- Place in a 450 oven for about 10-12 minutes until everything is hot and bubbly.
