Plum Tart Recipe
This tart is a wonderful way to use the fruit from your plum tree. It doesn't need to be the prettiest fruit but will make a very attractive and delicious treat.

Ingredients
  • 1 9" square tart pastry
  • 2 pounds of plums, pitted and cut into 1/2 inch wedges
  • 1 tsp. lemon juice
  • 1/4 cup plus 2 tsp. sugar
  • 3 Tbsp. all-purpose flour
  • 1/2 tsp. cinnamon
  • 1 Tbsp. heavy cream
  • 1/4 cup apricot jam, warmed and strained

Directions
  1. Preheat oven to 400 degrees and place an upside baking sheet on the shelf.
  2. Roll out your pastry on a lightly floured surface to about 1/4 inch thickness. It can be slightly rounded around the edges, not a perfect square. Transfer the pastry to the 9" tart pan and fit it in with the sides extending out and over the side of the pan so you can fold them over the fruit once filled, about 2 inches. (leave an area to be exposed, this is a not a sealed envelope sort of dish)
  3. In a large bowl combine the plums, lemon juice, 1/4 cup sugar, flour, and cinnamon. Pour this into the pastry and then fold the sides over the fruit.
  4. Brush the pastry with the cream and sprinkle with the remaining sugar.
  5. Place the tart pan atop the baking sheet in the oven and bake for 45 minutes.
  6. Once this has stopped bubbling and is cooled, about 1 hour, brush the warmed and strained jam over the fruit.
  7. A little whipped cream on the side wouldn't hurt anything but your waistline!
