How to make it

  • 1. In a large bowl, whisk together flour and water until smooth. Add eggs, cabbage, and green onions; mix until smooth.
  • 2. Cook bacon strips in a separate bowl until desired crispiness is reached.
  • 3. Oil a preheated nonstick or griddle pan. Pour half of the mixture into the pan. Using a spatula, flatten pancake until about 3/4-inch-thick. Place bacon on top of the pancake. When bottom is set (about 3 minutes), flip over the pancake and cook for 4 minutes. Flip again (bacon side up) and cook for 3 minutes or until firm and browned.
  • 4. Transfer cooked pancakes to a plate and slice into squares.
  • 5. Make okonomi sauce: Combine Worcestershire sauce, ketchup, honey, and oyster sauce.
  • 6. OPTIONAL: Garnish with bonito flakes and sesame seeds.
