Fried Loaded Potato Bites

- 4 Large potatos shopping list
- 1/3 Cup sour cream shopping list
- 2 Teaspoon pepper shopping list
- 2 Tablespoon salt shopping list
- 8oz Plain panko Crumbs shopping list
- 1 lb bacon - cooked crispy shopping list
- 8 oz Mild Cheddar shopping list
- 4oz Velvetta shredded shopping list
- 3 eggs shopping list
- 2 Tablespoon butter shopping list
- Enough Veg oil to fry with shopping list
Add to the panko Crumbs
- 1/2 Teaspoon ground red pepper shopping list
- 1 Teaspoon black pepper shopping list
- 1/2 Teaspoon Chipotle shopping list
- 2 Teaspoon salt shopping list
Dip for potato bites
- Any ranch dressing shopping list
- A little bit of chipotle seasoning shopping list
How to make it
- Cook Bacon Crispy, break up into small pieces.
- Boil potatos till they break with a fork very easily. Drain and mash up with butter leaving the potatos very dry and clumpy. Do not mash Alot you want big chunks of potato in there. Now mix in butter, salt, and pepper then allow the potatos to cool then add the Sour cream, Cheese, and Bacon. Lay the mix on a large pan and use a cookie cutter to make wedges. Dip into egg bath then toss with panko crumb mixture.
- Cook in oil @ 340-370 for about 1-2 min tops. Temp is crucial. If the oil is too cool it will take too long for it too cook and the potato bites will open up in the oil. Too hot and you will burn the outside of the bites and have a somewhat warm inside.
- Serve with the Chipotle Ranch dressing.
