Saucy Shrimp And Stone Ground Grits

Saucy Shrimp
- 1 tbsp. of vegetable oil shopping list
- 24 ounces of large (18-22 ct) raw shrimp, peeled and deveined shopping list
- 4-6 ounces of "hot" breakfast sausage (I used Jimmy Dean) shopping list
- 5 total mini peppers, red, yellow, orange, chopped (about one cup) shopping list
- 1/2 of very large red onion, chopped (about one cup) shopping list
- 2 ribs of celery minced (about 3/4) shopping list
- 5 garlic cloves minced shopping list
- 1 can of diced tomatoes with their juice shopping list
- 1 tsp of Old Bay Seasoning shopping list
- 1 tsp of smoky paprika shopping list
- 1 tbsp of Worchestershire sauce shopping list
- 1 cup of low salt chicken broth shopping list
Cheesy Grits
- 1 cup of stone ground yellow grits shopping list
- 1 can of skimmed evaporated milk 12 ounces shopping list
- 1 can of low salt chicken broth (I used the milk can to measure the chicken broth from a larger carton) shopping list
- 1 tsp of salt shopping list
- 1/2 cup of sharp cheddar cheese grated shopping list
- 2 tbsp of unsalted butter shopping list
How to make it
Shrimp Sauce
- Chop all the vegetables.
- Peel and prep shrimp, keep cold.
- In a warm skillet, add cold oil. (hot pan, cold oil, food won't stick)
- Crumble in the sausage and cook until no longer pink.
- Add onions, peppers, celery and saute over low-med heat until the veggies are tender but not mushy.
- Add garlic, seasonings, and tomatoes..
- Reduce heat to very low.
- Simmer very gently while you make the grits.
- When grits are done and hot.
- Add shrimp to sauce and crank up the heat to a high simmer and cook until the shrimp curl and are done. About 5 minutes. See Photo
- Ladle and serve. See Photo
- Chopped green onion tops would be nice over top.
- Serve with your favorite hot sauce to add to taste.
Cheesy grits
- In a deep sauce pan, bring evaporated milk and chicken broth to a rolling boil.
- Whisk in stone ground grits and keep stirring until thoroughly whisked in.
- Continue to cook over low heat for 15-20 minutes, stirring often.
- When the grits are cooked, add cheese, butter, seasoning. See Photo
- Cover and leave off heat while the shrimp cook in the sauce.

This was a first for me. In Portugal we use grits for baking and thickening winter soups only. I had to make some changes in the saucy shrimp recipe, used chorizo instead of sausage because that is what I had. I had no idea what breakfast sausage is....more
