Pumpkin Bars With Cream Cheese Frosting Recipe

Ingredients

BARS:

2 Cups Sugar

2 Cups flour

4 eggs

2 Tbsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1-1/2 tsp. cinnamon

1 Cup mazola oil

1 can (15oz) pumpkin

FROSTING:

1-1/2 sticks butter, softened

1 pkg. (8oz) cream cheese, softened

2 tsp. vanilla

3-1/2 Cups powdered sugar

(The frosting ingredients were doubled by my Mother years ago, I'm assuming the original amount didn't cover it to her liking, thought I'd throw this in, I've had a few people ask me.)

Directions

BARS:

Preheat oven to 350 degrees.

Combine all the BAR ingredients in a large bowl & mix until combined.

Bake in a greased 11x15 pan for 45 minutes or until a toothpick inserted near the center comes out clean.

Cool completely.

FROSTING:

Cream butter & cream cheese together in a large bowl.

Add vanilla & powdered sugar, mix till smooth.

If it seems stiff or not spreadable add a little bit of milk.

Spread over cooled pumpkin bars.

Is it supposed to be 3-1/2 Tbsp. of powdered sugar? My husband said cups, but we both thought that would be an insane amount of frosting!! Anyway, we love ANYTHING pumpkin and this sounds great, we will try this one for sure!!

I think your recipe sounds wonderful! One of my daughters needed a good pumpkin bar recipe for an upcoming dinner she's going to and this will be great for her! *I have a nephew stationed in Fairbanks in the Army who just left for Iraq last month.
