Brown Onion Gravy With Grilled Sausages

- 5 fat mild sausages (we used Johnsonville fresh sausages) shopping list
- 2 tbsp of bacon grease shopping list
- 6 ounces of medium ale shopping list
- 1 tbsp of canola oil shopping list
- 6 thinly sliced onions shopping list
- 6 ounces of medium ale shopping list
- 1 cup of water, shaken with 3 tbsp of all purpose flour shopping list
- several grinds of black pepper shopping list
- 1 tbsp of beef base (I use the chef's brand that is moist and needs to be refrigerated after opening) beef base, not a bouillion cube shopping list
- Bread slices to sop up the goodness. shopping list
How to make it
- In a medium skillet, (hot pan, cold oil...food won't stick) add canola oil, add onions and cook over medium heat until carmelized and lightly browned and thoroughly softened See Photo. Remove onions from skillet.
- Move to medium sauce pan on low heat on another burner.
- Do not clean the skillet.
- In same skillet, heat the bacon grease.
- Add the sausages and brown on each side. See Photo
- Add ale and and turn the heat down and poach the sausages until cooked through. Let the liquid evaporate and keep the sausages warm.
- Meanwhile add ale to cooked onions and several grinds of black pepper. See Photo
- Add beef base and stir to dissolve.
- Shake up flour and water in a jar.
- Add to onions/base and bring to boil and reduce to simmer.
- Sauce will thicken. See Photo
- Serve sausages on a piece of sturdy bread, topped with onion gravy and a side of bubble and squeak....Pour yourself another beer and enjoy.

Made these for dinner a couple of nights ago. I had some corn grilling on the grill so for the browning part of the sausage I did it on the grill and then finished them in the pan with beer. The onions couldn't be better! More in the IMI group ---...more
