How to make it

  • Mix oil, lemon juice, parsley, cayenne, thyme, paprika, salt and pepper in a medium bowl and add chicken. Mix to coat pieces.
  • Cover and marinate in refrigerator at least 2 hours, stirring occasionally. Prepare grill for barbecue or preheat broiler. Drain marinade into a small saucepan and boil for 3 minutes.
  • Thread chicken pieces onto 8 long metal skewers, leaving 1/4-inch between pieces. Or if using wooden skewers soak them for 30 minutes before cooking with.
  • Grill skewers over medium-hot coals or broil, turning once and brushing occasionally with marinade*, until tender and cooked through, about 10-12 minutes.*Do not brush with uncooked marinade (boil before brushing on cooking chicken).

    I had a couple of problems with this recipe. The intro has the word "lemon" in it but that isn't in the list of ingredients. Also, one "tbsp" confused me. So, I Googled this recipe as the link posted in the instructions didn't work for me. I found it at recipe.com and that site says it is an Atkins recipe (minus the cayenne pepper). The paprika measurement is one teaspoon. I used smoked paprika. I used two thighs but didn't reduce the amount of marinade. Grilled it over charcoal. A bit more in IMI. 5/31/15
