Skewered Spanish Chicken

- •1 1/2 lb chicken, Thigh, Meat Only shopping list
- • 1/4 cup olive oil shopping list
- • 2 tbsp parsley, Raw Fresh shopping list
- • 1 tsp thyme, Dried shopping list
- • 1 tbsp paprika shopping list
- • 1/2 tsp salt shopping list
- • 1/4 tsp ground black pepper shopping list
- • 1/2 tsp cayenne pepper shopping list
How to make it
- Mix oil, lemon juice, parsley, cayenne, thyme, paprika, salt and pepper in a medium bowl and add chicken. Mix to coat pieces.
- Cover and marinate in refrigerator at least 2 hours, stirring occasionally. Prepare grill for barbecue or preheat broiler. Drain marinade into a small saucepan and boil for 3 minutes.
- Thread chicken pieces onto 8 long metal skewers, leaving 1/4-inch between pieces. Or if using wooden skewers soak them for 30 minutes before cooking with.
- Grill skewers over medium-hot coals or broil, turning once and brushing occasionally with marinade*, until tender and cooked through, about 10-12 minutes.*Do not brush with uncooked marinade (boil before brushing on cooking chicken).

I had a couple of problems with this recipe. The intro has the word "lemon" in it but that isn't in the list of ingredients. Also, one "tbsp" confused me. So, I Googled this recipe as the link posted in the instructions didn't ...more
