How to make it

  • Olive salsa:
  • Combine all ingredients for olive salsa and set aside.
  • Cauliflower Puree:
  • Roast the garlic with the olive oil. Set aside.
  • Steam the cauliflower with the fresh thyme on top. When cauliflower is soft and tender, remove the thyme and place in food processor. Add the remaining ingredients and pulse until totally smooth. Taste and adjust seasonings as needed. Keep warm while grilling the steaks.
  • Steaks:
  • Season each side of the steaks generously with kosher salt and grill until med-rare. Tent with foil and let rest at least 10 minutes.
  • To serve:
  • Place a scoop of cauliflower puree on each serving plate. Top the puree with a steak. Top the steak with a little of the olive salsa and drizzle some of the juices from the olive salsa around the puree.
