How to make it

  • Blanch broccoli and cauliflower in boiling salted water for 2 minutes. Plunge into a boil of ice water to stop cooking process. (You can skip this step if you want, but I find it takes some of the bitterness out of the vegetables.)
  • Drain vegetables and place in large bowl. Add 1 tablespoon lemon juice to diced apple to prevent browning. Add apples, cranberries, green onion and bacon and toss to combine.
  • Combine mayonnaise, remaining 3 tablespoons lemon juice and maple syrup until smooth. Pour over salad.
  • Gently stir. Cover and chill at least one hour.
