Luscious Lime Cheesecake

- 3 cups graham cracker crumbs shopping list
- 2/3 cup sugar shopping list
- 2/3 cup butter, melted shopping list
- Filling: shopping list
- 2 envelopes unflavored gelatin shopping list
- 1 cup lime juice shopping list
- 1/4 cup cold water shopping list
- 1 1/2 cups sugar shopping list
- 5 eggs lightly beaten shopping list
- 2 teaspoons grated lime peel shopping list
- 2 packages (8 ounces, each) cream cheese at room temperature shopping list
- 1/2 cup butter, softened shopping list
- 1/2 cup heavy cream, whipped shopping list
How to make it
- In a bowl combine the graham cracker crumbs, sugar, butter & press into the botom and 2 in up the sides of a greased 9in springform pan. Cover and put in fridge for at least 30 minutes.
- In a saucepan, sprinkle gelatin over lime juice & cold water, let stand for 1 minutes, stir in the sugar, eggs, lime peel, cook and stir over medium heat until mixture reaches 160 degrees, remove from the heat.
- In another bowl beat the cream cheese & butter until fluffy, gradually beat in the gelatin mixture, cover and refrigerate for45 minutes or until partially set, stiring occasionally.
- in a bowl, beat the cream until stiff peaks form, fold into the lime mixture, spoon into crust, cover and refrigerate overnight.
