How to make it

  • In a bowl combine the graham cracker crumbs, sugar, butter & press into the botom and 2 in up the sides of a greased 9in springform pan. Cover and put in fridge for at least 30 minutes.
  • In a saucepan, sprinkle gelatin over lime juice & cold water, let stand for 1 minutes, stir in the sugar, eggs, lime peel, cook and stir over medium heat until mixture reaches 160 degrees, remove from the heat.
  • In another bowl beat the cream cheese & butter until fluffy, gradually beat in the gelatin mixture, cover and refrigerate for45 minutes or until partially set, stiring occasionally.
  • in a bowl, beat the cream until stiff peaks form, fold into the lime mixture, spoon into crust, cover and refrigerate overnight.
