Vegetarian Eggs Benedict

For my hollandaise sauce, if i have spare time, i use this recipe : Easy Hollandaise Sauce If not, i use McCormick's Sauce Mix.
Ingredients
- 2 eggs, over-easy or over-medium shopping list
- 1 english muffin, toasted shopping list
- 1 tomato, chopped shopping list
- 1/3 cup cooked spinach shopping list
- 1/2 cup Hollandaise Sauce shopping list
How to make it
- Stack tomato, spinach, and the eggs on top of the english muffin halves.
- Pour Hollandaise sauce on top. Salt & pepper to taste.
- Enjoy the yummyness :)
