Blueberry Molasses Cake

- 1/2 cup butter or margarine shopping list
- 1 cup sugar shopping list
- 1 egg shopping list
- 2 cups flour shopping list
- 1 tsp ground ginger shopping list
- 1 tsp cinnamon shopping list
- dash salt shopping list
- 1 cup sour milk or buttermilk ( even skim milk is fine ) shopping list
- 1 tsp baking soda shopping list
- 3 Tbs molasses shopping list
- 1 cup bluberries ( I used 2 cups, I found even better ) shopping list
- Topping: 2 Tbs granulated sugar shopping list
How to make it
- Grease and flour ( I use bakers spray ) a square 10 inch pan or a 8 x 10 biscuit pan or 2, 8 or 9 inch round cake pans
- Cream butter and sugar
- Beat in the egg
- Sift the dry ingredients
- Add alternately with the milk to the creamed mixture
- Stir in the molasses
- Fold in the berries
- Place mixture in pan or pans
- Sprinkle with the granulated sugar
- Bake in a preheated 350F oven until tested done in center
- Cool and dust with more granulated sugar
- Optional: top with whipped cream or ice cream
- Note: I baked the recipe in a 10 inch pan 45-1 hour
- Also the texture & flavor differs a bit if one chooses sour milk, buttermilk or even plain milk.
- However all are delicious!
