Lemon Chicken My Way

- 4 half chicken breasts ( 2 whole breasts divided) shopping list
- 4 large lemons ( use 2 for their juice and slice the other 2 thinly and set all aside aside ) shopping list
- 2 eggs shopping list
- 1 cup flour shopping list
- 1 tsp lemon seasoning ( also can use lemon seasoning for fish! ) shopping list
- salt and pepper to taste shopping list
- oil to fry ( I like olive or grape seed oil ) shopping list
- Sauce: shopping list
- The lemons shopping list
- 2-3 Tbs butter shopping list
- 1 tsp. sugar shopping list
- 2 Tbs dry white wine shopping list
- Optional Garnish : fresh chopped parsley shopping list
How to make it
- In a bowl fork beat eggs with juice from 2 large lemons and save the lemons for remainder of the sauce recipe
- Place chicken in egg juice mixture to cover well and set chicken aside while preparing remainder of recipe.
- In a bowl place flour, lemon seasoning and salt and pepper
- Heat oil in heavy duty saute pan over med-hi heat
- Remove chicken from egg mixture and coat chicken in flour on all sides
- Shake off excess flour
- Fry chicken in oil till golden on each side, turning only once
- Carefully remove chicken to a baking pan and cook 350F to finish cooking done about about 15 minutes
- Please note I do not pound chicken breasts flat- I like to keep them as is
- If you choose to pound flat, you may not need oven baking to finish cooking
- The last 5 minutes before chicken is done in the oven, cook lemon slices- or if oven cooking is not needed, place finished chicken on serving platter.
- Clean the pan ( remove excess oil and wipe clean )
- Melt butter in pan over medium heat , add lemon slices and sprinkle each slice with a little sugar.
- Turn over lemon slices
- Add the wine, and thinly cut up lemon pieces from the other 2 lemons that were used for their juice and add to pan and cook a minute longer - slices and pieces will become softened
- Cooking lemon sauce will only take a minute or two, to soften them!!!!
- Meanwhile place cooked chicken on platter if finished cooking in the oven.,
- Garnish with lemon slices and lemon pieces and drizzle liquid from the pan over the chicken
- Add fresh chopped parsley if desired
- Note: the sauce is just enough to drizzle over chicken and not drown it.
- But you can make more sauce by using more butter, wine, sugar and more lemons if desired etc.
