My husband loves cheese enchiladas. I like them, but like beef ones too. So I decided to "combine" the two in this delicious "Mexican Lasagna". I served this with Mexican Broken Rice

Really wish I could make this. I so miss corn tortillas. I can get flour ones here, but no corn tortillas and no masa harina to make my own. Sigh...
