    frankieanne ate it and said...
    I wanted to make this to go along with Taco Bell Enchiritos that I made for dinner last night but - what? - no rice!! How did that happen?? Ran out today and got rice and made this up at lunchtime to have with the leftover enchiritos. I had saved 1/4 of a cup of the enchilada sauce from the enchiritos and used that instead of tomato sauce. A can of vegetable stock was staring at me when I opened up the cupboard so that was used, too. Very tasty and mild and went well with the spicy enchiritos. A perfect pair. Added a picture.
