How to make it

  • In a medium bowl, combine ground meat with the flour, chili powder, salt, minced onion, paprika, onion powder & garlic powder. Use your hands to throughly mix the ingredients int the ground meat.
  • Add the ground meat mixture to the water in a in a skillet over medium heat. Mix well with a wooden spoon or spatula and break up the meat throughly as it cooks. Cook for 10 minutes or so until completely cooked. The fnished product should be very smooth without large chunks of meat remaining.
  • Microwave the beans for a couple of minutes on high.
  • Warm the tortillas by wrapping in moist paper towels and microvave on high or 1 minute.
  • Spoon 3 tbsp of the beans down the center of each tortilla.
  • Spoon 3 tbsp meat over the beans, and place in microwave safe cassarole.
  • Spoon a couple of tbsp of red sauce over the top of the tortilla, sprinkle a couple of tbsp of cheddar cheese on top.
  • Repeat until casserole dish is full.
  • Heat up in microwave until hot & cheese begins to melt.
  • Garnish with sour cream & green onions if desired.
  • NOTE: I don't use my microwave much, I, personally, bake the casserole in the oven until heated through...

    Delicious! I was amazed at how smooth the meat filling was. I guess maybe the flour does that? I've never had a meat filling that was so smooth. It was spicy enough to help the beans that didn't have any spices in them. I stirred the onions in with the meat right at the end so they wouldn't cook that much. I couldn't find fajita sized tortillas at my particular store so I used soft taco size. I filled up 10 of them and they barely fit into my casserole dish! I baked these at 350F for 20 minutes instead of microwaving. Added a couple of pictures. Posted this in a thread in IMI

    Can you please tell me when the 1/2 cup of diced onion goes in? Or is it sprinkled on the top? I had an enchirito a couple of weeks ago when I was in Missouri and I really loved it. I'd like to try to make these this weekend. Thank you. :)

    They were made with steamed corn tortillas originally if you want them to taste like you remember! They only used corn tortillas for this one item and the reason it was taken off the menu....food cost!
