How to make it

  • Cook and drain sausage in soup pot break up with fork while cooking
  • Add Rice, Beef Broth and Tomatoes and Black Pepper
  • Bring to a simmer
  • Cook for 12 to 15 mins. or until rice is tender
  • Stir in Spinach and let simmer for a few minutes
  • Laddle into bowls and top with grated cheese

    So simple, yet incredibly tasty! We loved it!
    I had to add more liquid, about 2 cups more as it was evaporating while simmering. It also took about 25-30 minutes to cook the rice, I used long grain white rice.
    I also used more tomato. I used a 398ml can of whole plum tomatoes packed in puree, and crushed the whole tomatoes in my hand before adding to the pot with the puree. That size can with the 8 cups of broth was perfect for me!
    You may want to use low sodium broth because as it simmers and evaporates it will become saltier. You could also use half broth and half water instead.
    Served with homemade focaccia bread and it was delish! I will make again!
