How to make it

  • Preheat oven to 180 C.
  • Grease and line the bottom and sides of cake tin with a layer of baking parchment.
  • Beat butter until creamy.
  • Add sugar and beat until fluffy and light.
  • Beat in the eggs gradually.
  • Sift flour and baking powder in another bowl.
  • Add coconut and grated rind of lemon.
  • Add flour in creamy mixture.Beat until smooth.
  • Add milk and mix well.
  • Spoon the mix into the prepared tin .
  • Sprinkle some cocunut on top and bake for 30 mins or until pale golden.
  • Cut into slices &serve.
