Ingredients
  • 6oz butter
  • 6 oz powdered sugar
  • 3 large eggs
  • few drops of vanilla essence
  • 9 oz plain flour
  • 3 tsp baking powder
  • 1 oz coconut
  • grated rind of 1 lemon
  • 2-3 tbsp milk

Directions
  1. Preheat oven to 180 C.
  2. Grease and line the bottom and sides of cake tin with a layer of baking parchment.
  3. Beat butter until creamy.
  4. Add sugar and beat until fluffy and light.
  5. Beat in the eggs gradually.
  6. Sift flour and baking powder in another bowl.
  7. Add coconut and grated rind of lemon.
  8. Add flour in creamy mixture.Beat until smooth.
  9. Add milk and mix well.
  10. Spoon the mix into the prepared tin .
  11. Sprinkle some cocunut on top and bake for 30 mins or until pale golden.
  12. Cut into slices &serve.
