Lemon And Coconut Cake

- 6oz butter shopping list
- 6 oz powdered sugar shopping list
- 3 large eggs shopping list
- few drops of vanilla essence shopping list
- 9 oz plain flour shopping list
- 3 tsp baking powder shopping list
- 1 oz coconut shopping list
- grated rind of 1 lemon shopping list
- 2-3 tbsp milk shopping list
How to make it
- Preheat oven to 180 C.
- Grease and line the bottom and sides of cake tin with a layer of baking parchment.
- Beat butter until creamy.
- Add sugar and beat until fluffy and light.
- Beat in the eggs gradually.
- Sift flour and baking powder in another bowl.
- Add coconut and grated rind of lemon.
- Add flour in creamy mixture.Beat until smooth.
- Add milk and mix well.
- Spoon the mix into the prepared tin .
- Sprinkle some cocunut on top and bake for 30 mins or until pale golden.
- Cut into slices &serve.
