This is a recipe we use when serving fish. It's spicy with cooler undertones from the cucumber. Ingredients are approximate as I just usually eyeball this one.

Ingredients
  • 2 cucumbers, peeled, seeded and shredded
  • 3 roma tomatoes, gently seeded and chopped
  • 1 carrot, peeled and shredded
  • 3 radishes, shredded
  • 6 green onions, chopped
  • 1 green chile or jalepeno, chopped
  • Cilantro, to taste, chopped
  • 1 lime, zest and juice
  • kosher salt to taste

Directions
  1. Combine all ingredients in a bowl, cover and refrigerate overnight.
