    Cucumber Salsa#

    I had all the ingredients in the refridgerator and thought I'd give it a go. I was sceptical about how well the cucumber would hold up shredded but it actually did just fine. Although it is a major ingredient, cucumber is so mild it really doesn't show off other than to give bulk. I was tempted to fiddle with seasonings and for a change I relented and let the veggies speak for themselves. I did add 2 tsp of rice vinegar just because I like sour with my cucumber but really the lime does a stand up job.

    CoffeeBean53 recommends this as a topping for fish. I agree that would be a perfect way to express this fancy condiment. I happened to use it as a topping for roast pork which is also a mild flavor. I recommend this to you all. I enjoyed it very much and shared it with my folks who also cheered it.

    Just finished this off and I'm going to have to make another batch. I've used it as a topping on soft tacos and omelets as well.

    That is a pork loin roast that I seared in some bacon fat that finished off in the crockpot. The roast sits on the bed of onions which you also see in the photo. The salsa is what makes the dinner extra special. Thanks!
